Bircher muesli was created in the late 19th century by Dr Bircher Brenner. He believed that combining fruit and unprocessed grains would dramatically improve his patients' health. The muesli is designed to soak overnight to activate the enzymes in the seeds and whole grains. Though a few minutes in the microwave with water also works well.
Ingredients:
1/2 cup sunflower seeds
1/3 cup pumpkin seeds
1/3 cup linseeds
1 1/3 cups sultanas (or any combination of dried fruit)
2/3 cup buckwheat groats
1 1/3 cups barley, flakes
2 cups oats
1/2 cup slivered almonds
Directions:
1. Mix all ingredients together.
2. Put 1/2 cup of the muesli in a bowl with 1/2 cup of cold water, milk or juice, stir, cover and leave overnight in the fridge to soak.
3. For a quick breakfast, prepare as above, cook on high for 1-3 minutes in the microwave.
4. Serving suggestions: stir in fresh grated raw apple or other fresh fruit just before serving. To enhance the healthful properties serve with low fat yoghurt and a spoonful of (manuka) honey.
