This was something I put together on the spur of the moment. We had just lost power for a few days after a bad ice storm, and most of the food in house was gone. To my surprise, it was delicious and everyone loved it.
Ingredients:
2 tablespoons flour
2 tablespoons butter or 2 tablespoons margarine
1 1/2 cups milk
1/3 cup chopped onion
1 (20 ounce) container sour cream
1 (4 ounce) can sliced mushrooms, not drained
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup grated parmesan cheese
2 (6 ounce) cans light chunk tuna in water, drained
cooked pasta (your choice) or rice (your choice)
Directions:
1. Melt butter or margarine in a large skillet over medium heat. Add salt and pepper. Add chopped onion and stir until transparent. Stir in flour to make a roux. Add milk and stir until thickened. Stir in sour cream, mushrooms, parmesan cheese and tuna. Stir until smooth. Reduce heat, cover and simmer for 15–20 minutes to allow flavors to mingle. Serve immediately over pasta or rice.
