This delicious cheese ball is a holiday staple at our house. I believe I got the recipe from a Miriam B. Loo cookbook years upon years ago. It is just perfect! Why anyone would ever buy a pre-made cheese ball - instead of making one of these - is beyond me! Read more !
Ingredients:
2, 8 ounce packages cream cheese
1, 8 ounce package shredded sharp cheddar cheese
1 envelope dry onion soup mix
1 teaspoon fresh lemon juice
dash of cayenne pepper
1/2 cup pecans, finely chopped
1/2 cup chopped parsley
crackers
Directions:
1. Let the cream cheese sit at room temperature for 1 hour to soften before continuing with the recipe.
2. In a large mixing bowl, combine softened cream cheese and Cheddar cheese. Mix well.
3. Add onion soup mix, lemon juice, and cayenne. Mix well.
4. Chill.
5. Divide the mixture into 2 parts. Shape into 2 balls.
6. Combine nuts and parsley in a small bowl.
7. Place the nut mixture on wax paper. Roll the cheese balls in the nut mixture.
8. Wrap in foil or plastic wrap. Refrigerate overnight.
9. One hour before serving time, put each ball on a serving plate and surround with an assortment of crackers.
10. Makes 2 balls.
11. One cheese ball can be frozen for later use if not needed now.
