These are the best cookies! I always mix the chocolate chips (mini's, milk choc chunks, and semi sweet morsels). They are big, almost a meal in themselves!
Ingredients:
3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
1 1/2 cups butter, at room temperature
1 1/2 cups granulated sugar
1 1/2 cups brown sugar, firmly packed
3 large eggs
1 tablespoon vanilla
3 cups chocolate chips (a mixture of milk or semi)
3 cups old fashioned oats
2 cups sweetened flaked coconut
2 cups chopped pecans
Directions:
1. Heat over to 350°.
2. Mix flour, baking soda, cinnamon and salt in bowl.
3. Beat butter on medium speed until smooth and creamy, gradually beat in sugars, beat to combine.
4. Add eggs one at a time, add vanilla.
5. Stir in flour mixture until just combined.
6. Add chocolate chips, oats, coconut and pecans.
7. For each cookie drop 1/4 cup dough onto ungreased baking sheet (I use a large ice cream scoop).
8. Bake at 350° for 17-19 minutes or until edges are lightly browned.
9. Cool cookies on rack.
