This is a decadent, delicious dish, great for brunch or a post Yom Kippur break-the-fast or Shavuot meal (in the Jewish calendar) Because it is so rich, a little goes a long way so this recipe probably feeds around 12-16.
Ingredients:
1 cup margarine or 1 cup butter, melted
4 eggs
1 1/2 cups milk
2 1/2 cups flour
6 tablespoons sugar
2 teaspoons baking powder
1 pinch salt
2 lbs cottage cheese
8 ounces cream cheese, softened
2 tablespoons sour cream
2 eggs
1/4 cup sugar
1/8 teaspoon salt
Directions:
1. Preheat oven to 350.
2. Spray a 9x13 inch baking dish with cooking spray.
3. For the batter:
4. Beat eggs, milk and melted margarine together in a large bowl.
5. Add dry ingredients and mix thoroughly.
6. Make sure cream cheese is very soft and then combine all filling ingredients in another bowl.
7. Pour half the batter in prepared pan.
8. Carefully spread filling over batter.
9. Cover with remaining batter.
10. Bake about 1 hour till golden brown and puffed.
