Bibingka Ingredients:
3 cups cassava, grated |
2 eggs |
1 1/2 cups equal sugar substitute |
3/4 tablespoon iodized salt |
1 1/2 tablespoons butter |
1 1/2 cups coconut milk |
439 g pineapple |
1/3 cup coconut milk |
Directions:
1. Squeeze liquid from grated cassava. Set aside. Beat eggs. Add sugar, salt and butter. Mix well. Stir in coconut milk, grated cassava and Pineapple. Pour into a greased 8 X 8 square pan. 2. Bake in a preheated oven at 350oF for 55 minutes, or until light brown in color. Pour pure coconut milk on top. Bake for another 5 minutes, or until top becomes golden brown. |
