A lovely moist loaf carrot cake. The recipe makes two loaves.
Ingredients:
500 g carrot
1 apple
1 orange
50 g raisins
2 eggs
100 g brown sugar
2 tablespoons honey
100 g oatmeal
400 g plain flour
125 g butter
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 teaspoon cinnamon
1 teaspoon mixed spice
Directions:
1. Grate the carrot, apple and zest of an orange into a large mixing bowl.
2. Add the spices, sugar, honey and raisins and mix well.
3. Beat the two eggs into the mixture.
4. Melt the butter and pour onto cake mixture.
5. Add the oatmeal, flour, baking powder and bicarbonate of soda and fold into the batter.
6. Pour mixture into two loaf tins and bake at Gas Mark 4 for 1 hour.
