There's a lot of hermit recipes out here- but none of them seemed to have the right caloric index, so that's why I've put this one up. Pretty similar to others though.
Ingredients:
1/2 cup butter, softened (not melted)
1 cup brown sugar (packed)
1 egg
1/4 cup cold coffee
1 3/4 cups sifted flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 1/4 cups raisins
3/4 cup chopped nuts
Directions:
1. Cream the butter and the brown sugar and the egg, then add in the cold coffee (doesn't need to be super chilled, just room temp or below).
2. In separate bowl, mix flour and spices. Now add sugar mixture to flour mixture, stir in raisins and nuts, and let chill in the fridge for 30 min or so.
3. Take out and drop spoonfuls onto a high-rimmed pan (helps keep them dense- it you like lighter, more spread out cookies do it on a no-rim pan).
4. Bake 8-10 minutes.
