Betty Crocker Banana Pancakes

Simple but really good. Great to make ahead and keep in fridge and just cook up any time or easily heated or toasted for a quick breakfast!
Ingredients:
1 egg
1 cup flour
3/4 cup milk
2 tablespoons vegetable shortening
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 medium banana, 1/4 inch pieces (about 1/2 cup)
1/4 teaspoon nutmeg
Directions:
1. Beat egg with hand beater until fluffy.
2. Add rest of ingredients and mix until just moistened, but do not overmix.
3. Grease a griddle and heat.
4. Drop about 3 tbsp of batter onto hot griddle per pancake.
5. Flip once the edges start to bubble and appear dry.
6. Cook opposite side until golden brown.
