My son asked me if, for his birthday, I could take him to Ihop for breakfast because he loves their pancakes. Money was too tight to go to Ihop so I decided to try and make them at home... I can't believe how easy it was to make these delicious pancakes. Read more .. Enjoy! :)
Ingredients:
1 1/2 c buttermilk
1 egg
3 tbsp melted butter
1 tbsp vanilla
1 tsp ground cinnamon
1 c all-purpose flour, sifted
3 tbsp sugar
1/2 tsp fresh baking soda
1/2 tsp baking powder
1/2 tsp salt
butter and syrup to taste
Directions:
1. Put all wet ingredients into one bowl
2. put all dry ingredients in another bowl
3. Whisk both lightly
4. Add roughly half of the dry mix into the wet and whisk together, not too long, just blend.
5. Add remainder of dry mix and whisk lightly together (make sure all mixed together but do not beat too much as it will make the pancakes tough, the batter should not be runny, it should be a little on the thick side)
6. Set aside for five minutes
7. Set heat on high, butter the skillet and pour batter into rounds, about 1/4 c each.
8. Make sure to cook slow, when small bubbles form all over flip it over, should take about 1 to 1 1/2 minutes each side.
9. Cover with your favorite topping, butter and serve..
