The recipe my mom used to make, now the recipe I like to make. We experiment with spices, berries, and chocolate chips. It's great for breakfast, and the chocolate ones can be desert too. Takes a bit of experimentation, as I have no measurements for the spices or the chocolate but to play by eye. Read more . Also, I like to double this recipe, it just doesn't make enough on it's own! Also, I wish I had a picture for y'all, sorry I don't! I may have to get one next time I make these though.
Ingredients:
1 3/4 cups all-purpose flour
1/4 cup sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 well-beaten egg
3/4 cup milk
1/3 cup salad oil (or melted shortening)
Directions:
1. Preheat oven at 400 degrees.
2. Sift Dry ingredients into bowl.
3. Add Wet ingredients to bowl.
4. Stir quickly until dry ingredients are moist.
5. Fill greased muffin pans 2/3 full.
6. Bake at 400 degrees for 20 minutes.
7. -For Flavors, divide the batter into different bowls:-
8. Spice: Use a pinch or two of nutmeg, allspice, and tablespoon or so of cinnamon. Add some sugar and about 1/4 teaspoon vanilla essence. Taste the batter and add spices or such until it tastes right to you. These typically taste like spice cake in the end.
9. Chocolate: Spoon of baking cocoa, half cup of chocolate chips, bit of vanilla essence (1/4 teaspoon), A few tablespoons of sugar. (2, maybe 4). Mix WELL. Taste the batter, as with the previous. (I also like to sprinkle extra chocolate chips on top before they go in to cook.)
