Easy homemade scones with a few healthy substitutions. Scones need real butter to taste right, but I've halved the amount of butter by using canola oil. Using white whole wheat flour added nutrition and didn't take away from the flavor.
Ingredients:
5 cups white whole wheat flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
1/2 cup canola oil
3/4 cup sugar (more if you like your scones really sweet.)
2 eggs
3/4 cup milk (i use soy milk)
1 1/2 teaspoons vanilla
1 navel orange, peeled and chopped
1/2 orange, zest of
1/2 cup dried sweeten cranberries
Directions:
1. Preheat oven to 325.
2. Combine flour, baking powder, salt in a large mixing bowl.
3. Cut in butter.
4. Add all other ingredients.
5. Place large spoonfuls on parchment paper covered baking sheets.
6. Bake 20 minutes.
