Coming from Eastern European heritage, cabbage and noodles has always been a favorite of my family, but is not always healthy, This is my version of the classic, but better for you.....and is 4 WW POINTS for one serving. You can also add diced turkey polish sausage or lowfat ham ( will change the points though) for a one dish meal.
Ingredients:
3 cups green cabbage, chopped (about one head)
1 medium onion, chopped
1 teaspoon olive oil
1 cup carrot, shredded
3 garlic cloves, minced
8 ounces egg noodles, uncooked
2 tablespoons butter
1/4 cup chicken broth
2 teaspoons salt, divided
1/4 teaspoon pepper
Directions:
1. Heat a large skillet and add olive oil. Add the onion, carrots and garlic and saute for about 5-10 min, or until tender. Season with 1 tsp.salt and pepper.
2. In another pot, boil salted water ( use the other 1 tsp of salt water) add noodles and cook to package directions.
3. While the noodles are cooking, add the cabbage and about a 1/4 chicken broth back into the skillet, (season again with salt and pepper if needed.) Cover and let the cabbage steam until it is tender.
4. When the noodles are done, and the cabbage is tender, add the drained noodles to the cabbage mixture and mix in the butter until melted.
5. Serve.
