Better For You Banana Stuffed French Toast

This is a special treat for breakfast brunch or even desert. I use bread that is at least 2 days old and feel decadent when I enjoy it! Hope you do too!
Ingredients:
canola cooking spray
1 thoroughly beaten egg (use whisk if you have one)
1/4 cup fat-free milk (canned is fine)
1/4 teaspoon vanilla extract
dash of cinnamon
2 slices multi grain loaf bread, cut 1 inch thick on the diagonal
1/3 cup thinly sliced banana
2 tablespoons finely chopped and toasted pecans
sugar-free pancake syrup
sifted powdered sugar (optional)
Directions:
1. Preheat oven to 500 degrees
2. Line a baking sheet with foil. Lightly caot with cooking spray
3. Beat together egg milk vanilla and cinnamon in a shallow bowl.
4. Using a sharp knife, cut a pocket horizontally from the top crust nearly to the bottom crust in each slice of bread. Fill bread pockets with banana and pecans
5. Dip stuffed bread slices carefully into egg mixture, coating both sides
6. Place slices on the prepared bakikng sheet
7. Bake in 500 degree oven for 10 to 12 minutes or until golden brown, turning once.
8. If desired sprinkle with powdered sugar. Serve with warmed syrup
9. If made for desert consider drizzling with chocolate, caramel or a fruit syrup such as strawberry. Recipe is easy to double. Enjoy!
