Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those scary numbers we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping. Side Note: Many people use Splenda as a sugar substitute, if you get an icky aftertaste try Stevia, like Truvia . I personally prefer Sun Crystal , a mix of natural sugar cane and stevia. Ultimately, it's your choice.
Ingredients:
1 1/4 cups organic whole wheat flour
1/4 cup unbleached all-purpose flour
2 teaspoons baking powder
4 (8 ounce) packets stevia truvia (or 1/4 cup of splenda no calorie sweetener)
1/2 teaspoon salt
1 teaspoon cinnamon
4 mashed bananas
1 large egg
1 teaspoon vanilla extract
1/2 cup no-sugar-added applesauce
1/2 cup walnuts, chopped and toasted (no salt added)
butter-flavored cooking spray
Directions:
1. Preheat your oven to 350 degrees. In a large mixing bowl combine all of your wet ingredients ; mashed bananas, egg, vanilla, and apple sauce. In a second bowl, combine your dry ingredients : both flours, baking powder, sweetener, cinnamon, and salt. Slowly, add dry mix to the wet until just blended. Then mix in the walnuts. Spray a 9x5 loaf pan with no stick spray. Spoon in mixture. Bake until knife comes out clean, about 45 minutes. Allow to cool slightly before serving.
