My all time favorite comfort food. I was looking for a super flavorful macaroni and cheese that was easy to make, and didn't have any expensive ingredients, but I never found one that was quite right, so this is what I came up with. It is definitely not healthy, but hey, Mac N Cheese isn't supposed to be healthy.
Ingredients:
1 lb casserole elbow macaroni, cooked to almost al dente in well salt water
3 tablespoons butter
2 cups whole milk
1 lb velveeta cheese, cut into smaller cubes for easier melting
1/2 lb american cheese
1/2 lb blue cheese, finely ground in food processor
salt and pepper
4 slices american cheese, to top the casserole
1/4-1/2 cup breadcrumbs
Directions:
1. Preheat oven to 350.
2. In large non stick skillet melt butter over med heat.
3. Add milk and Velveeta, stir until melted.
4. Add American cheese and blue cheese, stir until melted.
5. Add salt and pepper to taste.
6. Allow to come to a boil, continuing to stir, then turn down heat to low until you are ready to use cheese sauce.
7. Pour noodles into 13x9 baking dish, cover with cheese sauce, stir until well combined.
8. Cover with tin foil, bake 20 minutes.
9. Uncover, tear remaining American cheese into strips and lay over the top, then sprinkle bread crumbs on top.
10. Cook 15 more minutes uncovered, or until topping is golden brown and bubbly.
11. Let sit 15 minutes before eating.
