Best Shepard's Pie I've ever tasted. Deliciously home-cooked one dish meal.
Ingredients:
6 large baking potatoes
1 lb ground beef
3/4 cup baby carrots, chopped
3/4 cup frozen lima beans
1/2 cup diced onion
1 (8 ounce) can corn, drained
1 cup butter
4 tablespoons worcestershire sauce
2 tablespoons olive oil
1/2 cup milk
1/2 cup cream
salt and pepper
1 cup mild cheddar cheese
Directions:
1. Preheat oven to 375°F.
2. Peel potatoes, wash, cube and boil them until soft for mashing.
3. Mash potatoes and mix in butter, milk, cream, salt and pepper.
4. Cook ground beef, drain and add Worcestershire sauce, simmer.
5. Saute all veggies, EXCEPT the corn, in olive oil until slightly tender, but not cooked through.
6. Mix the sauteed veggies in with the ground beef, heap into casserole dish.
7. Layer the corn on top of the ground beef mixture in casserole dish.
8. Spoon and smooth out the mashed potatoes on top of the corn.
9. Bake for 15-20 minutes.
10. Top with cheddar cheese and broil until cheese is melted.
