This is an amazing shepherds pie that i have perfected over a few years, Ive heard nothing but good things but try it for yourself, I guarantee you wont be let down. Great way to get the kids to eat there veges. I throw all the veges in one pot, some later than others (depending on cooking times) while cooking mince, then it all goes in a casserole dish, cheese on top, and in the oven to golden cheese. Note: They wouldn't let me add Watties just add mince simmer sauce - Cottage Pie tho the ingredients, if you can get it, use instead of tomato paste and chopped tomatoes, (its sooo much better) This makes a lot, but is just as good heated up for lunch.
Ingredients:
5 potatoes
1/4 pumpkin
1 big kumara
4 carrots
1/2 cauliflower
1 broccoli
150 g mixed mushrooms
2 onions
1200 g mincemeat
3 teaspoons crushed garlic
2 teaspoons ground pepper
2 tablespoons salt
1/3 cup milk
2 teaspoons paprika
mixed herbs
1 cup tomato sauce
1/3 cup barbecue sauce
450 g chopped tomatoes
450 g tomato paste
soy sauce
mint sauce
cheese, for grating ontop
Directions:
1. Start by peeling your potatoes, kumara, pumpkin and carrots, chopping them up and putting them in a big pot of hot water to start boiling.
2. Once they start to soften you can add the other vegetables into it (they will all get mashed together in the end) so u can put almost anything you want in there.
3. While that starts to cook, put the mince in a large wok or big frypan with the chopped up onions (however you like em) and a few dashes of soy sauce for it to cook inches Cook on medium heat stirring often until All the mince is starting to brown. You can start preparing the simmer sauce in between stirs.
4. Simmer sauce - Cans of tomato paste, chopped tomatoes, into a mixing bowl, add 3/4 cup of tomato sauce (or sauce of preference),1/3 cup of bbq sauce, the chopped up Mushrooms, 2 teaspoons of paprika, a sprinkle of mixed herbs, 4 Tablespoons of mint sauce and mix together.
5. Once the Mince is browning add the simmer sauce and simmer until its starting to loose its sloppiness .
6. By this time the veges will be soft, drain the water, add 1/3 cup of milk, 2 teaspoons of pepper, 3 teaspoons of crushed garlic, and 2 Tablespoons of salt, Mash and mix well.
7. Empty mince into a large casserole dish, and cover with your super vege mix , grate cheese on top and chuck in the oven for 10-15mins until cheese is melted.
