This is our family's all time comfort food. It freezes well and the texture is wonderful. Most requested recipe from the grand kids.
Ingredients:
1 lb macaroni
2 large eggs, lightly beaten
1 cup 1/2 & 1/2
1 cup milk
1 cup velveeta cheese, cubed
2 cups assorted shredded cheese (cheddar, swiss, jack)
pepper
1/4 c butter
Directions:
1. Preheat oven to 350. Lightly butter a deep 2 1/2 quart casserole. Cook pasta according to package directions. but don't overcook. Drain pasta and return to cooking pot and add 8 tbsp of butter. Add 1 1/2 cups of cheese to pasta and mix well. Heat gently till cheese melts. Mix milk with eggs and pepper pour over pasta.
2. Pour mixture into casserole. Sprinkle with remaining 1/2 cup cheese and bake until bubbling around the edges.
3. The grand kids like bread crumbs mixed with butter on top of the pasta.
