Very rustic, hearty and oh so comforting. You can add your own special touch to make it yours. I was looking for a bread pudding recipe but knew I had to make it mine and it was for a holiday potluck so it needed to be special. I hope you enjoy it!! I served it with a pumpkin maple sauce. NOTE- this was thrown together so not all exact measurements
Ingredients:
1/2 loaf cranberry walnut bread (bakery style-hearty)
1/2 loaf raisin bread (bakery style-hearty)
1/2 loaf white bread (bagged sliced style)
4 -5 leftover hotdog buns (optional)
1/4 cup of melted butter (more or less can be used)
1 cup dried cranberries
1/2-1 cup raisins
1/2 cup chopped pistachios (approx)
1/2-3/4 cup white chocolate chips
8 eggs
4 cups milk (2c half and half light cream)
2 cups light cream
1/2 cup sugar (i did a white and brown sugar mix)
1 teaspoon cinnamon (or to taste)
1 teaspoon vanilla
Directions:
1. preheat oven 350*.
2. lightly butter large pyrex baking dish - 9x13.
3. rip bread into chunks and drizzle melted butter over it.
4. in bowl, whisk eggs, milk, sugar, cinnamon and vanilla.
5. pour over bread and press down until bread starts to absorb liquid.
6. Bake 45 minutes.
7. This was rich and creamy and so good.
8. I apologize again because I threw most of it together without measuring. So please feel free to comment on what you used as for as measurements go. Like with most recipes, they are canvases in which we can add our own touch too - .
