Best Buttermilk Pancakes

Easy, fluffy and light buttermilk pancakes made with buttermilk powder, for those of us who don't actually drink buttermilk.
Ingredients:
1 1/4 cups all-purpose flour
1/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt
4 tbsp buttermilk powder
1 1/4 water
1/4 cup vegetable oil
1 egg
Directions:
1. Mix all wet ingredients together.
2. Mix all dry ingredients together.
3. Mix both until just blended.
4. Let sit for 5 minutes.
5. Portion by 1/4 cup fulls onto hot griddle set at 350f.
6. Cook until dry around edges and bubbly in middle, flip and cook until golden brown. About 1 minute each side.
7. Makes 10 cakes.
8. Note: substitute fresh buttermilk for water and powder if using.
