About 20 years ago I had a slice of blueberry pie in a Maine restaurant that was out of this world. Years later when I was back in that part of the country I discovered a blueberry cookbook that had a recipe that sounded somewhat similar to what I had in that restaurant. Read more . I was so pleased to make it and find out it was so similar.
Ingredients:
1 baked pie shell
4 cups blueberries
3/4 cup of sugar
1/4 teaspoon salt
1 tablespoon lemon juice
1/4 cup water
2 tablespoons cornstarch
1 teaspoon of butter
Directions:
1. The cooking time is a rough estimate for a baked pie shell.
2. Bake and cool a pastry shell.
3. Fill with 2 cups of fresh blueberries.
4. Cook 2 cups of blueberries with the water, cornstarch, sugar, lemon juice, and salt.
5. Cook until the ingredients have thickened.
6. Remove from the heat and add the butter.
7. Cool.
8. When the berry mixture is cold, spoon over the other berries in the baked pastry shell.
9. Chill until ready to serve.
10. The pie is great with fresh whipped cream.
