Best Apple Cinnamon Farfel Kugel

A dear friend gave me this recipe and we love it. This is considered a Passover kugel but it is great any time of year. I like to combine cinnamon with confectioners' sugar and sprinkle it on the top. Mmmmm, it's good.
Ingredients:
1 cup hot water
1 cup matzo farfel
1/2 cup white sugar
2 large apples - peeled, cored and shredded
2 teaspoons ground cinnamon
3 egg whites, stiffly beaten
note: i usually use 2 cups hot water and 2 cups matzo farfel
Directions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Spray an 8 x 8 inch baking dish with non-stick cooking spray.
3. In a large bowl, combine the water and farfel.
4. Add the sugar, apple, and cinnamon.
5. Fold in the egg whites.
6. Pour mixture into the prepared baking dish and dust the top with more cinnamon.
7. Bake at 375 degrees F (190 degrees C) for 45 minutes.
