Berry Soy Muffins

Ingredients:
1 1/2 cups whole wheat flour
1/2 cup oat flour
1/2 cup splenda sugar substitute, for baking
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 egg white
3/4 cup light vanilla soymilk
1/4 cup unsweetened applesauce
1 teaspoon lemon zest
1 teaspoon vanilla
1 cup frozen berries
Directions:
1. preheat oven to 375.
2. in bowl ,whisk together flour through salt.
3. In second bowl, whisk egg, egg white, soy milk, applesauce, and vanilla, add zest.
4. Pour into dry ingredients.
5. Stir until just mixed.
6. Spoon batter into muffin tins sprayed with cooking spray.
7. bake for 20 to 22 minutes.
