This cucumber spread originated in Louisville, Ky where I currently live It is largely popular for weddings as finger sandwiches or a dip
Ingredients:
1 large cucumber
8 ounces cream cheese, softened
2 tablespoons grated onions
1/4 teaspoon salt
1 tablespoon mayonnaise
1 dash green food coloring
Directions:
1. Pare, grate, and drain cucumber. Combine with remaining ingredients in food processor.
2. Serve chilled.
3. I like to serve it on Carrs water crackers.
