Ingredients:
6 red bell peppers, roasted and peeled
2 cloves garlic, crushed
4 tbsp red wine vinegar
1 pinch of cayenne
1 tsp ground cumin
4 tbsp extra virgin olive oil
2 tbsp parsley, chopped
2 tbsp cilantro, chopped
1 tsp grated lemon peel
Directions:
1. Blend the peppers into a puree in a food processor with the garlic, vinegar, cayenne, cumin, and olive oil.
2. Put puree in a serving bowl and mix in the chopped parsley, cilantro, and lemon peel.
