Ingredients:

Directions:

  1. In a 9x13-inch roasting pan drizzle olive oil on bottom of pan (approx 1 tbsp).
  2. Place green beans on bottom of pan.
  3. Stuff spinach into pan, it will look overflowing DO NOT WORRY about this it will cook down.
  4. Lay tilapia over top of spinach, top with garlic, onions, and tomatoes.
  5. Drizzle with olive oil (approximately 1 tbsp).
  6. Cover with foil and cook 30-40 minutes at 350°F.
  7. Uncover and sprinkle Parmesan cheese and return to oven to bake for additional 10 minutes or until cheese is melted.
