When my Mom lived in New Orleans I couldn't wait to go to Cafe DuMonde every morning for these & hot chocolate!
Ingredients:
1 pkg. yeast- (1/4 c)
1 1/2 c warm water
1 tsp sugar
2 beaten eggs
1 c evaporated milk
7 c bread flour
1/4 c soft butter
oil for frying (375 degrees)
powdered sugar
Directions:
1. combine yeast, water, & sugar-let proof( become frothy) -if you are using yeast fron the fridge you must let it get to room temp.
2. mix ,eggs, milk ,salt , butter and proofed yeast
3. add first 4 c flour
4. add rest of flour
5. cover the dough & let sit overnight in the fridge
6. punch it down
7. roll it out onto a floured surface
8. cut into 4 x 4 squares
9. lay on rack to drain
10. sift powdered sugar over beignets while still hot
11. ENJOY!
