Beginner Level Austrian Pancake

A puffy pancake sprinkled with cinnamon and sugar or filled with fresh fruit
Ingredients:
1 cup flour, unsifted
2 tablespoons sugar
3/4 teaspoon salt
3 eggs (always use large eggs, unless otherwise indicated)
2 cups whole milk
1 cup light cream
2 tablespoons butter
Directions:
1. Preheat oven to 375 degrees
2. Sift flour with sugar and salt into a medium bowl.
3. With a fork, beat the eggs in a medium bowl. Beat in milk and cream until well combined. Stir in flour mixture; mix until smooth.,
4. Meanwhile, in a heavy 10 inch iron skillet., heat the butter until sizzling,.(Don't let it get brown.) Turn batter into skillet.
5. Bake 30 minutes or until golden brown.
6. Sprinkle with confectioners sugar, or cinnamon & sugar, or fill with fresh strawberries and top with a dollop of whipped cream.
7. Cut into serving pieces and serve right out of the iron skillet.
