Beets Baked in a Bag

A novel way to cook beets before adding to salads or serving as a side.
Ingredients:
4 sprigs thyme
1/2 ounce butter
sea salt, flakes
1 lb baby beets (cut larger ones in half)
balsamic vinegar
Directions:
1. Heat the oven to 350°F
2. Divide the beets between 4 parchment bags or make foil parcels.
3. Add a sprig of thyme, a knob of butter and a few drops of balsamic to each and seal.
4. Bake for 30-40 minutes or until the beets are tender. Serve in the bags.
