Beetroot, Pumpkin and Chickpea Salad

Healthy and delicious summer treat
Ingredients:
600 g beets
2 teaspoons olive oil
2 garlic cloves, crushed
500 g pumpkin
150 g chickpeas, canned
30 ml olive oil
30 ml balsamic vinegar
100 g baby spinach leaves
100 g feta cheese
Directions:
1. Bake beetroot mixed with gralic and olive oil for 10 mintes
2. Add pumpkin to the baking dish and bake for a further 20 minutes
3. Combine chickpeas oil and vinegar in a large jug
4. Place beetroot, pumpkin, spinach and chickpea mix in a large bowl and toss gently
5. Serve topped with crumbled feta
