Earthy and colorful, beet salad is easy to make and complements many dishes.
Ingredients:
1 large clove garlic
1/4 teaspoon salt
1/3 cup lemon juice
2 tablespoons olive oil
3-4 whole beets
2 green onions
Directions:
1. Cooking time depends upon the size of beets.
2. Steam beets in a little water until tender.
3. While they are steaming, peel and chop garlic.
4. In a bowl, mash it into a paste with salt. Mix lemon and oil with garlic paste.
5. Chop green onions.
6. When beets are done and cool enough to handle, slice them into wedges and place in a bowl.
7. Toss with scallions and dressing.
8. Serve warm or cold
