Ingredients:
2 cups beet juice, from about 2 pounds peeled beets
3 tablespoons canola oil
1 teaspoon lemon juice
salt and pepper
Directions:
1. In a saucepan, bring beet juice to a boil and reduce 50 percent. Remove from heat and whisk in oil in a slow stream. Whisk in the lemon juice and season with salt and pepper.
