Beet Hearts With Chevre

Its Valentine's Day & I'm serving this for the first time! Its from Party Dish, Romantic Dinner For Two . Unfortunately, my beet slices are smaller than my cookie cutter so I've shaped the hearts free-hand .
Ingredients:
2 medium beets
1/2 tablespoon vegetable oil
1/4 cup chevre cheese
fresh chives
Directions:
1. Preheat oven to 400°F.
2. Rub beets in oil, wrap in foil& roast for an hour or until fork tender in the center; remove from foil& cool.
3. Peel skins from beets by just rubbing with your fingers- don some rubber gloves unless you don't mind red fingers!
4. Slice the beets into rounds about an inch thick; using a small heart-shaped cookie cutter, cut into each beet slice.
5. Transfer slices to individual serving plates, top with crumbled chevre& garnish with chives.
