I got this after I tried it at a Christmas party. I could have eaten the whole thing. It is a pretty pink color too. It is a cream cheese based dip, good for veggies, crackers and fruit. It has a little bit of sweetness, but not overpowering. I'll bet you could make this sugar free by using some Stevia and/or vegetable glycerin.
Ingredients:
2 (8 ounce) packages cream cheese, room temperature (not lite)
1/4 white sugar
1/2-3/4 cup miracle whip or 1/2-3/4 cup mayonnaise
3/4 cup cooked beets, pureed in a food processor
1/4 cup diced onions or 1 bunch green onion
Directions:
1. In a mixer, beat the cream cheese, sugar and Miracle Whip or mayo until fluffy. Adjust Miracle Whip as needed.
2. Add pureed beets and diced onion and mix well.
3. Refrigerate until serving, to let the flavors blend.
