a sweet tasting borscht
Ingredients:
3 c cabbage, chopped & fried
2 tbsp canola oil
3 potatoes, cubed
5 beets, cubed
1 1/2 carrots, chopped
1 celery stalk
1/4 c lemon juice
2 tsp dill
1 tsp dried mustard
1 1/2 c plain low-fat yogurt
4 c water
Directions:
1. mix in a pot all ingredients except yogurt & lemon juice
2. bring to a boil
3. simmer until tender
4. add lemon juice
5. blend 60% of mixture in blender
6. serve with a couple spoonfuls of 1.5% fat yogurt
