Beet Bisque

A hearty beet bisque just like the kind they serve in restaurants!
Ingredients:
3 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, diced
9 medium beets, peeled and chopped
3 cups vegetable broth
1 teaspoon salt
1 teaspoon ground pepper
1/4 teaspoon ground cinnamon
1 -2 teaspoon ground allspice
1/4 cup sugar, plus
2 tablespoons sugar (or adjust to taste)
Directions:
1. Fry onion and chopped garlic in olive oil over medium heat in pan for about 5 minutes, or until soft. Mix in chopped beets and cook for 2 minutes more.
2. Stir in vegetable stock, salt, and pepper. Cover and let simmer for 25 minutes or until the beets are tender.
3. Pour beet mixture into blender or food processor (you may have to do it in batches). Blend until creamy.
4. Pour soup back into the pan and mix in cinnamon, allspice, and sugar. Cook for additional 3 minutes. You can add 1/2 cup of water to get the texture you want.
