Beet and Sunflower Seed Salad

A quick, light, healthy, crunchy side salad!
Ingredients:
1 lb raw beet, peeled and finely grated
2 ounces sunflower seeds, toasted
1 orange, juice and zest of
2 tablespoons fresh parsley, chopped
salt and pepper
Directions:
1. Mix together the beet, orange juice and zest and parsley. Season well and allow to stand for 20 minutes.
2. Just before serving stir in the toasted sunflower seeds.
