I had these at a friends and got the recipe . . . she made them two-bite sized
Ingredients:
1 cup beer
1/4 lb butter
1 cup flour
1/2 teaspoon salt
4 eggs
2 cups corned beef, finely chopped (real or deli)
2 tablespoons onions, finely chopped
1/4 teaspoon horseradish
2 tablespoons mustard
2 teaspoons mayonnaise
Directions:
1. The day before: Bring beer and butter to a boil. When butter is melted, add flour and salt. Cook this over low heat, stirring constantly, until the mixture pulls away from the sides of the pan. Remove from heat.
2. Preheat oven to 450 degrees F.
3. Beat in eggs one at a time until dough is shiny. Drop by teaspoonfuls 1 inch apart on a lightly greased cookie sheet. Bake for 10 minutes. Reduce temperature to 350 and bake an additional 10 minutes. Let cool. Split with scissors and refrigerate until ready to fill.
4. Prepare filling: Combine all filling ingredients and chill.
5. When ready to serve spoon the filling into the puffs and put on a platter.
