Lura and I were watching Diners, Drive ins and Dives the other night…well ok a while back. Triple D is probably our favorite cooking show, I don’t know about you but I would much rather go to a hole in the wall type place then some chain franchise. Read more . It's been about 50Mc years since the drive-ins started to tell us how we Mcwanted our food and I get a little Mctired of it. We do have a place that was featured on 3D in town, Lura does not see why as she does not think that they are that special, but BOBOs has been around for a LONG time and they are what they are, a drive in dinosaur that has survived. I personally like to find Nessey every once and a while. Eating out would be Mcboring without spotting Nessey. Oh…sorry I was just going to say that they showed a dinner making Beer Cheese Chowder and it caught our attention. Now Lura does not drink beer…an occasional glass of wine for my little fairy. I on do on occasion down a cold one gwanted those occasions awe few and faw between , so we collaborated on our own beer cheese chowder and were very happy with the results. On the first try we used Keystone beer, because what is my motto? That’s right, No beer is too cheap for my friends! The second try we used Boulevard Brewing Company's wheat beer. Better Beer, Better Piazza, Pop….oops….sorry forgot what I was doing. Give it a try we enjoyed it, hope you do too.
Ingredients:
• 6 small potato (chunks)
• 3 cups chicken stock ( 3 cups potato water + 3tsp chicken bouillon)
• 1/2 cup finely chopped onion (sprinkled with water and cooked tender in microwave)
• 1 can, 12 oz, beer
• 1-1/2 cups grated cheese (colby jack)
• cheese sauce (1/2 cup whole milk & 3/4 slice velveeta cheese, microwave and stir until smooth.
• 1/2 tsp worcester sauce
• pinch of white pepper
• thickening agent (2 tbls flour and 1/2 cup skim milk mixed until smooth)
• 3/4 cup precooked chicken diced (optional)
Directions:
1. In a 3quart Sauce Pan boil chunks of potato in water.
2. Chop onion finely and place in a bowl with a sprinkle of water then cook in microwave until limp.
3. Remove potato from the potato water when barely done.
4. Add chicken bouillon to potato water and turn heat to medium high.
5. Add Cheeses (grated and cheese sauce) and beer, stirring constantly.
6. Add Worcester Sauce
7. Add White Pepper
8. Add thickening agent: Mix flour and skim milk until smooth and then gradually blend into main mixture.
9. Cook over medium heat until mixture just begins to thicken.
10. Add cooked diced chicken it you wish.
11. Reduce heat and serve.
