II have used this Recipe for many years. I found it in the “Frying Pans West Cookbook by Sam Arnold” back in 1971 It is based on a Recipe from 1885 from the Palace Hotel in San Francisco. Try it and let me know. Mason Ingredients:
8 ounces oysters |
12 ounces steak, of your choice |
2 tablespoons butter |
1 1/2 tablespoons flour (i use cornstarch) |
water |
1/2 fresh lime juice (i use juice of full lime) |
salt & pepper |
1 dash garlic salt (i use granulated garlic or minced garlic) (optional) |
4 ounces chopped pimiento |
parsley (to garnish) |
Directions:
1. In a sauce pan cook oysters in their own juice with the butter until the edges curl. Add flour to sauce, stirring in carefully to prevent lumps. Add a little water to thin to a medium thick gravy. Add the lime juice, salt & pepper. Now is the time to add the garlic. In the meantime broil the steak of your choice. 2. Pour the oyster sauce over the steak and garnish with the parsley and pimentos. |
