Beef & Vegetables Stir-Fried in Oyster Sauce

This is an extremely easy and quick stir-frying dish! Beef can be substituted for other meat such as pork, chicken or sausage, and feel free to add vegetables of your choice, such as asparagus, carrot, bamboo shoots or shiitake mushrooms. Recipe from the Umami Information Center.
Ingredients:
200 g beef sirloin, thinly sliced (200g=7.05oz)
1/8 tsp salt
1/16 tsp pepper
0.16 oz sake
1 tsp low sodium soy sauce
2 tsp of cornflour
3 medium of scallions
1/2 red pepper
50 g oyster mushrooms (shiitake and enoki mushurooms) (50g='2oz)
150 g pak choi
1 tbsp oyster sauce
1/2 tsp low sodium soy sauce
2 tbsp vegetable oil
1/2 tsp sesame oil
Directions:
1. Slice the spring onions thinly, cut the pepper into bite-sized chunks, chop up the oyster mushrooms and cut the pak choi into 3-4cm strips, keeping the stalks separate.
2. Mix the beef with the salt & pepper, sake and 1 teaspoon of soy sauce and sprinkle with the cornflour.
3. Heat 1 tbsp of vegetable oil in a frying pan, and add the beef, frying quickly. Transfer to a plate, leaving the oil in the pan.
4. Put the remaining vegetable oil in the pan, and add the spring onions, pepper, oyster mushrooms and pak choi stalks, followed by the pak choi leaves and cook over a high heat. Return the beef to the pan, then mix together the oyster sauce, ground pepper and remaining soy sauce. Add the sesame oil to finish.
