Beef Vegetable Barley Soup

Tasty and low fat beef barley soup, with everyday vegetables from the fridge and pantry. Easy, tasty and good for you.
Ingredients:
8 oz beef sirloin
1 onion
2 carrots
2 stalks celery
4 cloves garlic
1 cup sliced mushrooms
1/2 cup barley
14 oz canned tomatoes
28 oz beef broth
1/2 cup peas
1/2 cup green beans
Directions:
1. chop beef into bite sized chunks. Sautee beef in pan to caramelize the exterior.
2. chop vegetables. saute onion, carrot, celery and garlic for 5 minutes. add mushrooms and saute until soft, about 5 more minutes.
3. add 1 tsp dried thyme to vegetables.
4. add tomatoes and broth to pot. bring to a boil.
5. reduce heat to low and add barley.
6. simmer for 45 minutes until barley is cooked and tender. You may need to add 1 or 2 cups of water.
7. add peas and green beans during the last 10 minutes of cooking.
