I cut this out of our Sunday newspaper. I hope to make this sometime this month, and when I do I will add more comments. I was really intrigued by this recipe, very different, but with great possibilities.
Ingredients:
2 1/2 lbs beef tenderloin
1 cup unsweetened pineapple juice
1/2 cup lemon juice
2 tablespoons cornstarch
2 tablespoons butter
2 tablespoons honey
1 teaspoon beef bouillon granules
1 1/2 cups fresh peach slices, chopped
Directions:
1. Preheat oven to 425.
2. Sprinkle with salt and pepper.
3. Bake 30 to 40 minutes or until thermometer reads 140 for medium rare.
4. Remove from pan.
5. Cover and let stand 15 minutes.
6. Meanwhile for sauce, combine pineapple juice, lemon juice and cornstarch in saucepan.
7. Add butter, honey, and bouillon granules.
8. Cook and stir until thickened and bubbly.
9. Cook and stir 2 minutes longer.
10. Stir in peaches, heat through.
11. Thinly slice meat across grain.
12. Serve with sauce.
