Yummy Beef Stroganoff.
Ingredients:
1 lb lean beef, cut into bite-sized pieces
1 teaspoon butter
2 cups fresh sliced mushrooms
1/2 cup chopped onion
1 cup nonfat beef broth
2 tablespoons ketchup
1 garlic clove, minced
2 tablespoons cornstarch
1 cup fat free sour cream
Directions:
1. Saute the mushrooms, onions and garlic in butter. My son won't eat onions, so I process them and the garlic in the food processer first. He can't tell the difference. Add the beef and ketchup. Make a slurry with the beef broth and cornstarch, then add to beef mixture. Cook until thickened, then add the sour cream. Serve over noodles, potatoes or rice.
