Beef Stew With Spicy V-8

My dear friend Liz passed this recipe on to me years ago... it is flexible as far as veggies you want to add. Pretty basic stuff. But the V-8 adds a nice kick and this remains a favorite recipe.
Ingredients:
1 lb stew meat
1 (32 ounce) bottle v-8 spicy vegetable juice
1 (28 ounce) can diced tomatoes
1 (16 ounce) can green beans, drained
2 -3 red potatoes, cut up into large chunks
1 (16 ounce) bag baby carrots
1 onion, diced
salt and pepper
Directions:
1. Brown meat in small amount of oil.
2. Add canned tomatoes and let cook for about 10 minutes.
3. Add vegetables and enough V-8 juice to cover.
4. Let simmer until cooked through.
5. You can season as desired with salt/pepper.
