Beef Stew In A Casserole

This stew is sure to warm your soul.
Ingredients:
2 lbs. stewing beef, cut into chunks
2 tbsp. oil
2 cups beef broth
2 large onions, chopped coarsely
1 large potato, peeled sliced
1 parsnip, peeled and sliced
1 carrot, peeled and sliced
1 can cream of mushroom soup
1-1/4 cups whole milk
1 cup sour cream
1/4 teaspoon pepper
1-1/2 cups shredded cheddar cheese
1-1/4 cups corn flakes or potato crisps, crushed
Directions:
1. Heat oil in skillet until melted.
2. Cook meat until it is brown.
3. Remove meat and set aside in a bowl and saute onion in the same skillet until tender.
4. Add the broth and beef, bring to a boil, then simmer for 50 minutes.
5. Pre-heat oven to 350 degrees.
6. Pour beef into casserole dish and layer the sliced potatoes, parsnips and carrots over the beef.
7. Blend the milk, soup, sour cream, salt and pepper and pour over beef, potatoes, parsnips and carrots.
8. Sprinkle with cheese and crushed corn flakes.
9. Bake about 1-1/2 hours.
