Every cook needs a good beef stew recipe for company. This one is hearty stew that even improves with standing.
Ingredients:
2 lbs beef chuck or 2 lbs round steaks, cut into chunks
2 tablespoons oil
1 teaspoon salt
1/2 teaspoon white pepper
1 cup beef broth and water
1 bay leaf, crushed
2 -4 whole cloves
2 teaspoons dried thyme
4 carrots, peeled and sliced
6 potatoes, peeled
2 onions, sliced
2 stalks celery, sliced
1 / stalk broccoli spear
1 green pepper, sliced
Directions:
1. In dutch oven brown meat, a little at a time. Discard excess fat. Add salt and pepper.
2. Stir in beef broth and water. Bring to a boil. Add bay leaf and cloves.
3. Reduce heat. Simmer, covered until meat is almost tender, for about 1 1/4 hours. Add thyme.
4. Add vegetables. Cook for another 20-30 minute until vegetables are tender crisp and meat tests done.
5. Serve piping hot.
