Beef Spinach Roll
Ingredients:
1 1/4 pound lean ground beef
1/4 cup ketchup
1/4 cup milk
1/2 cup egg beaters
1/4 cup bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
10 ounces chopped spinach, thawed & drained
1/2 teaspoon salt
3 ounces part skim mozzarella cheese, shredded
Directions:
1. Thaw spinach in hot water and drain.
2. Mix meat mixture ingredients. On aluminum foil, pat meat mixture into a 10 x 12 inch rectangular shape. Arrange spinach on top and sprinkle with .5 teaspoon salt. Sprinkle cheese over spinach.
3. Carefully roll up meat, using foil to lift the meat. Press edges and ends of roll to seal.
4. Place in a 11 x 7 inch baking dish. Gently pour 1/2 cup water around the meat.
5. Bake uncovered in 350 degree oven for 1 hour and 15 minutes.
