A comfort food that will leave your family full but wanting more! (I have to double the recipe!) Serve with a green salad and some garlic bread!
Ingredients:
1 pound lean ground beef
1 14.5 can chopped tomatoes-undrained
1 10 ounce can rotel, undrained
2 teaspoons of sugar
2 teaspoons of salt
1/4 teaspoon of pepper
1 six ounce can of tomato paste
1 bay leaf
1 6 ounce of medium egg noodles
6 green onions chopped
1 cup sour cream
1 cup shredded sharp cheddar cheese
1 cup shredded parmesan cheese
1 cup mozzarella cheese
Directions:
1. Preheat oven to 350.
2. Brown ground beef in skillet until it crumbles and is no longer pink, drain and return to skillet.
3. Stir in chopped tomatoes and next 4 ingrediant; cook 5 minutes Add tomato paste and bay leaf, simmer 30 minutes.
4. Cook egg noodles according to package directions, drain and set aside.
5. In large bowl mix green onions with sour cream, add egg noodles mixing well.
6. Place noodles in bottom of a lightly greased 9x13 pan, top with beef mixture and cover with cheese evenly.
7. Cover and bake for 35 minutes.
8. Uncover and bake for 5 additional minutes.
9. Enjoy ;)
